Tuesday Dinner 20140401 Potato Soup

Served for Tuesday Dinner on 2014-04-01.

Ingredients

  • 1/2 lb butter
  • 1 head garlic
  • 3 onions
  • 1 1/2 lb mild Italian sausage
  • 1 lb bacon
  • 5 lb potatoes
  • 4 carrots
  • 2 green bell peppers
  • 8 oz frozen peas
  • 8 oz frozen corn
  • 1 T Better than Bouillon mushroom base
  • 8 c water
  • 8 c milk
  • green onions
  • salt and pepper to taste

Directions

  1. Mince garlic and chop onions an bacon.
  2. Cook butter, garlic, onions, and bacon in skillet over medium heat.
  3. Chop potatoes, carrots, and bell peppers.
  4. Combine all ingredients except green onion and milk and boil, covered, over low heat for 45 minutes.
  5. Chop green onion and add to pot with milk.
  6. Heat over high heat until hot.

Notes and Variations

Onions and garlic may be cooked separately from meats and meat may be added before serving if preparing vegetarian and non-vegetarian versions.
