Tuesday Dinner 20140304 Kissel

A dessert made from thickened fruit syrup.

Served for Tuesday Dinner on 2014-03-04.

Ingredients

  • 1 pt fresh strawberries
  • 2 c water
  • 2/3 c sugar
  • 3 T arrowroot

Directions

  1. Remove stems or leaves from strawberries and boil in 1 1/2 c water for 10 minutes.
  2. Purée in blender or with immersion blender.
  3. Add sugar. Stir and continue to boil until sugar is dissolved.
  4. Combine remaining water (cold) with arrowroot.
  5. Gradually add to fruit purée.
  6. Cook until thickened.
  7. Chill in refrigerator.

Notes and Variations

Other fruits may be substituted for strawberries to produce different flavors. Cinnamon, lemon juice, or red wine can be added during the first step. Sprinkling sugar on top when chilling can prevent a skin from forming. May be served with whipped cream or sweetened sour cream. If arrowroot is unavailable, 1/4 c cornstarch may be substituted.
