Small Russian blini, with sour cream, smoked salmon, and dill, served as appetizers.

Ingredients

  • 1/2 baking potato
  • 1/3 c flour
  • 1/3 c wheat flour
  • 1/2 t baking powder
  • 1 T butter
  • 2 eggs
  • 1 1/2 c milk
  • 8 oz smoked salmon
  • salt and white pepper to taste
  • olive oil

Directions

  1. Boil the potato for 50 minutes.
  2. Mix flour, wheat flour, baking powder, white pepper, and salt.
  3. Melt butter and mix with eggs and milk.
  4. Mash potato with liquids.
  5. Whisk liquids into dry ingredients.
  6. Heat olive oil in a skillet or griddle.
  7. Using a ladle or large spoon, cook batter in the skillet or griddle until done, about 2-3 minutes on each side.
  8. Top with sour cream, smoked salmon, and dill

Notes and Variations

Should make about 25. For a vegetarian version, substitute roasted red bell pepper for smoked salmon. Clarified butter may be used instead of olive oil.
