Small Russian blini, with sour cream, smoked salmon, and dill, served as appetizers.
Served for Tuesday Dinner on 2014-03-04.
Ingredients
- 1/2 baking potato
- 1/3 c flour
- 1/3 c wheat flour
- 1/2 t baking powder
- 1 T butter
- 2 eggs
- 1 1/2 c milk
- 8 oz smoked salmon
- salt and white pepper to taste
- olive oil
Directions
- Boil the potato for 50 minutes.
- Mix flour, wheat flour, baking powder, white pepper, and salt.
- Melt butter and mix with eggs and milk.
- Mash potato with liquids.
- Whisk liquids into dry ingredients.
- Heat olive oil in a skillet or griddle.
- Using a ladle or large spoon, cook batter in the skillet or griddle until done, about 2-3 minutes on each side.
- Top with sour cream, smoked salmon, and dill
Notes and Variations
Should make about 25. For a vegetarian version, substitute roasted red bell pepper for smoked salmon. Clarified butter may be used instead of olive oil.
